What is the difference between mercerized and unmercerized cotton?

Unmercerized cotton is the more natural state. It's soft against the skin, and gets softer with use as fibres start to wear out (think of a well-loved pair of jeans). It's quite absorbent, but can also shrink. Colours tend to be more muted and will fade more with age and use.

Mercerized cotton has been treated to give it extra strength. It's smoother than unmercerized cotton, which gives it a a slightly shiny appearance. It is water absorbent but doesn't become saturated as quickly as unmercerized cotton. Dyes last longer, and the yarn is less likely to shrink. More resistant to mold & mildew.
